These hams were cut from a whole back leg of the pig and then tied off and put into our brining solution for 7 days for a good proper seasoning. then taken out and hung up in the walkin for 3 days to dry and then cold smoked ready for you to cook at home. These are skin on hams so if you like cracklins you are in luck! this is about the only ham you will find with the opportunity to have cracklin skin on your freshly roasted ham for your holiday dinner!
